A while back I made a yummy (even if I do say so myself) birthday dinner for a loved one. The main dish was lamb chops with roast potatoes. It turned out to be a big hit with the family, so I thought I’d share the recipe. Let me know if you try it out!
Chops: 1 1/2 kg.
1 tspn salt
1 heaped tspn garlic and ginger paste
2 heaped tspn barbecue spice
Half tspn black pepper
1/2 tspn tandoori spice
1 tblspn Mrs Balls Chutney
1 tblspn Thai sweet chilli sauce
Leave the meat in the marinade in the fridge for a few hours to really soak in.
Boil the potatoes first until done.
Paprika for colour
Place in Air-Fryer or oven until golden-brown.
Serve with saffron rice.
