Cheesy Cauliflower Casserole

One of my favourite veggies is cauliflower and, granted, the poor little ‘cloud tree’ (as I used to call it as a kid) has never gotten the fame as its cousin, broccoli (or ‘green tree’ as littler-pianodiva used to call it).

Did you know that cauliflower contains cancer-fighting compounds and is rich in vitamins and minerals that can assist in boosting heart and brain health? Pretty cool, right?!

I thought I’d share with you one of my favourite recipes that is the perfect accompaniment for grilled/steamed fish or chicken.

(And if you’re feeling bad for ‘green tree’, you can add it to the casserole 😉 ):

Cauliflower, cut

Braised onions

1 cup milk

Butter

1 tspn flour

Pinch of salt

Black Pepper

1 cup cheese

1/4 cup breadcrumbs

Thyme

Oregano

Fresh green coriander (for garnishing)

Firstly, set your oven to ‘grill’ function between 180 and 200 degrees Celsius.

Steam the cauliflower with a little salt and a tablespoon of braised onions. Whilst the veggie is cooking, prepare the white sauce:

Melt butter in a saucepan. As the butter warms up, add the flour into the cup of milk and stir until dissolved. When the butter has melted, take it off the heat and mix in the milk mixture. Put the saucepan back on the stove-plate and continuously stir until the sauce thickens and boils. Add a pinch of salt and sprinkle black pepper.

Once the cauliflower is steamed, pour it into an oven dish, then mix with the white sauce. Stir some thyme and oregano with the breadcrumbs and drizzle all over the top of the veggie. Top with cheese and garnish with chopped coriander.

Place the dish in the oven and wait until the top gets golden-brown.
